This month we profile one of Brisbane newest restaurants and bars Donna Chang and The Boom Boom Room. A new jewel in the Crown for the Ghanem Group the venues will surely offer new and exciting experiences for the conferencing and events market. Hospitality moguls Ghanem Group welcome two new venues
Boasting some of the biggest names in Australia’s bar and restaurant scene, Brisbane hospitality dynasty Ghanem Group will soon be adding two new, luxury venues to its impressive portfolio – Donna Chang and Boom Boom Room.
Launching 2018, Donna Chang and Boom Boom Room are set to bring a modern Chinese restaurant and high-end underground bar experience to the city’s booming hospitality scene.
Boasting a 120 capacity ground floor dining space and three private dining rooms on a mezzanine level, Donna Chang will offer the theatre and drama of traditional Chinese cuisines, combined with fine dining, locally sourced ingredients and modern flavour combinations.
The menu, which has been developed by Group Executive Chef Jake Nicholson and Head Chef Jason Margaitis, will challenge the traditional; from peking style BBQ duck with native fruit glaze and BBQ Suckling pig, to Mangrove blossom honey Char Sui pork and an impressive selection of dim sum – it’s a food experience that’s set to dazzle even the harshest critics.
Head Dim Sum Chef Sam Lie of acclaimed restaurant group Hakasan (New York, Las Vegas, Dubai and London) will work alongside Nicolson and Margaritis to bring the theatrics of Chinese cuisine to Brisbane. A live grouper and shellfish tank featuring the first successfully farmed Queensland grouper fish from the Rocky Point Aqua Culture facility will also be on display, adding to the authentic experience.
While rooftop bars are aplenty in Brisbane, Boom Boom Room will take opulence underground with a basement bar that that sits beneath Donna Chang. Accommodating up to 250 people and offering an expertly-curated ever-changing beverage list with influence from across the world, Boom Boom Room will be the place to be in the CBD.
Private rooms hidden inside bank vaults will bring a touch of old-world mystery to the venue, allowing guests to step back in time as they enjoy cocktails, wine and spirits created and hand picked by some of the best mixologists in the country.
Helmed by Managing Directors Nehme and Adonis Ghanem, Ghanem Group already boasts a portfolio of household names, including Blackbird Bar & Grill, Blackbird Private Dining & Events, Byblos Bar & Restaurant Portside, Byblos Bar & Restaurant Melbourne and their new fast casual dining concept Lord of the Wings.
Nehme Ghanem said the group is thrilled to expand their offering even further with these two new venues.
“Donna Chang and Boom Boom Room offer dining and bar experiences unlike anything Brisbane has seen before – from the high end food and beverage offering, through to the extravagant interiors – the venues will bring food to life in ways we had previously only imagined,” Mr Ghanem said.
“Queensland’s climate lends itself perfectly to the vibrant, aromatic flavours of various Chinese cuisines. Coupling traditional Chinese cooking techniques with native Australian ingredients and a nod to Cantonese and Sichuan flavours, Donna Chang will be the new way to enjoy Chinese in Brisbane.

Jason Margaritas, previously Head Chef at Melbourne’s Spice Temple, will join Donna Chang as Head Chef, alongside Shawn Gomes, formally of II Centro and Mr and Mrs G.
Ghanem Group’s iconic Bar Manager, Aaron Clarke, will spearhead the beverage offering at both venues, the result, an enviable list of exciting, progressive and internationally celebrated cocktails, beer, wine and spirits.
